Abstract

The article discusses the nutritional value and chemical composition of quail eggs, their effect on the human body, and the feasibility of including   them in dietary therapeutic and preventive nutrition. The organoleptic indicators of the quality of quail eggs of different breeds bred in Georgia  were studied, and the distinguishing features of different classes of eggs were analyzed. The morphological properties   of the egg were investigated, the yield and ratio of egg albumin, yolk, and shell,  and   the pH and refraction coefficient of egg albumin and yolk were determined, which, with other indicators, indicate the high quality of quail eggs of all  test breeds and comply with the requirements for quail eggs.
