Abstract

The article discusses the optimal methods and modes of obtaining alcoholic extracts of seeds and skins from the raw materials of "Jvarisula" colored grapes variety. The content of anthocyanins, ascorbic acid, and toxic elements was determined in the composition of these extracts. The antioxidant activity of the composition of the extracts was also evaluated. It has been established that the said extracts have great prospects for using in the production of strong antioxidant, polyphenolic concentrates for therapeutic and preventive purposes.
